Summertime…..and The Grilling Is Easy

Ahhhh….summertime, and the living is easy. And so is the grilling. I don’t know about you, but I do get a little bored with burgers and steaks on the grill. Sometimes I want (and need) something that’s lighter, but still tasty and satisfying. Fish on the grill is always an option, but let’s face it–living in Denver makes us a bit land-locked, and finding fresh fish choices is a challenge. And, since my husband and I don’t grill it very often, we never get it right. Which leaves me cooking it in the oven, and NOT something I want to do in the heat of the summer. Pieces of April

I absolutely love the song “Pieces of April” by Three Dog Night. In my mind, it’s the more sophisticated (and musical) version of that quaint saying, “April showers bring May flowers….” There’s a metaphor for life, don’t you think? I love springtime. But for some reason, April bums me out. Maybe because a lot of tragedies in our nation’s history happened in April. Maybe because the weather is psychotic, especially here in Colorado. But it’s spring. Isn’t every one bubbling over with joy and happiness? Apparently not.
